6 Ingredient No-Bake Granola Bars

Looking for some snack inspiration to help you stay fuelled through the afternoon? These 6 ingredient granola bars are a great source of fibre, protein, and energy for that 3pm slump. Try them out and let me know what you think!

Ingredients:

  • 1 1/2 Cups Rolled Oats

  • 1/2 Cup Peanut Butter (or other nut butter)

  • 1/4 Cup Honey (or Maple Syrup)

  • 1/2 Cup Dates (pitted)

  • 1/3 Cup Sunflower Seeds

  • 2 Tbsp Ground Flaxseed

Optional Topping:

  • 1/2 Cup Dark Chocolate

  • 1 Tbsp Coconut Oil

Directions:

  1. Process dates in a food processor until small pieces remain and they form a “dough” consistency or come together to form a ball (about 1 minute).

  2. Place oats, sunflower seeds, flaxseed, and dates in a large mixing bowl.

  3. In a small pot on the stove over low heat, stir together peanut butter and honey until warm and well combined, then pour over the dry mixture and stir well until well-combined (should be slightly wet and sticky consistency).

  4. Once everything is well mixed together, transfer to an 8x8 baking dish lined with parchment paper. Press down firmly - it can help to add an additional layer of parchment paper on top and use the bottom of a glass to flatten the mixture down until well-packed.

  5. Let the mixture firm up in the freezer for 15-20 minutes, then remove from the freezer and cut into 8-10 even sized bars.

  6. Optional: melt chocolate and coconut oil in the microwave, then dip or drizzle on the finished bars. You could also top with additional nuts/seeds, sea salt, or coconut flakes.

  7. Store in freezer for a few days, or in freezer for a few weeks.
